Hunterdon Food Calendar: August 3, 2015

It really has been a lush summer in New Jersey! The grass is thick and aromatic; the trees so full and vibrant. I love the way the sunlight dapples among the leaves. Everywhere I look, the growth is just stunningly beautiful, fresh and vivid. And if you’ve been at the farmers’ markets over the last few days, you’ll have seen the BOUNTY for yourself.

Classes. If all that summer produce feels like more than you know what to do with, why not take a cooking or canning class?

At the Stockton Market, sign up for tomorrow’s Cowboy Candy canning class with certified master food preserver Marian Bolum. In this hour and a half class, she’ll show you how to make and preserve sweet & spicy jalapenos. Looking ahead to August 19, the class will cover yellow tomato basil jam. Mmmmm….

Farm Cooking School Corn

Also in Stockton, The Farm Cooking School offers classes most days of the week. Located at Tullamore Farms, the school offers classes for both adults and kids taught by chefs Ian Knauer and Shelley Wiseman. Both have written for Gourmet magazine, published textbooks and have a wealth of culinary experience.

This week, you can take a cooking class focused on the many ways to prepare corn, including Mexican and Italian versions of “on the cob,” Fresh Corn and Zucchini Tamales, Cornmeal Fried Chicken and Mexican Corn Popcicles.

The Summer Bistro series certainly will help you make the most of the summer harvest. You’ll learn how to make salads, improve your grill techniques and even make sweet desserts like sorbets and ice creams.

Or try the Techniques of Italian Cuisine class and master delights like panna cotta.

If you’re new to cooking classes and feel a bit intimidated, don’t be! They’re a lot of fun, and you’ll definitely walk away with new skills and a greater enthusiasm for the kitchen.

Al Paris and Alan Heckman

Tastings. The Stockton Inn will kick off a new tasting menu on Wednesday – and it features my absolute favorite food: Lobster. Executive Chef Alan Heckman partners with Chef Al Paris, of Paris Bistro & Jazz Café in the Chestnut Hill section of Philadelphia, for a 5-course tasting menu.

The tasting menu is $79 per person and is available through Sept. 6. It features:

Chilled Lobster Mole

Charred Chili, Chocolate and Pickled Avocado

Maine Lobster Bisque

Burnt Apple Marmalade and Creme Fraiche

Grilled Lobster Sausage

Scallop and Tomato-Riesling Gastrique

Lobster Summer Bean Cassoulet

Lobster Tail and Orange Glazed Pork Belly

Raspberry-Lavender Shortcake

Port-Lobster Syrup

On the radar:

Tickets are on sale for the annual Farm-to-Fork dinner and wine tasting at Alba Vineyard on August 30. The event benefits the Foodshed Alliance, a grassroots organization dedicated to integrating local food systems that sustain local farmers.

Nine regional chefs will present a cocktail hour and eight course gourmet wine-pairing dinner, featuring foods locally produced from farms in northern New Jersey and eastern Pennsylvania, and paired with Alba wines.

Here are the chefs who will be sharing their culinary creations at the dinner.

Here’s what you’ll find at area farmers’ markets: Everything!! Basil, beets, bok choy, broccoli, broccoli rabe, cabbage, carrots, celery, chives, cilantro, sweet corn, dill, eggplant, fresh garlic, green beans, fresh onions, green peppers, cut herbs, kale, leeks, lettuce, mint, mushrooms, napa cabbage, new potatoes, oregano, parsley, peaches, potatoes, radishes, rosemary, sage, snap peas, Swiss chard, summer squash, tatsoi, thyme, tomatoes, zucchini and MORE.

Most markets will also have eggs from free-range chickens, grass-fed and pastured meats, preserves, specialty foods, baked goods like breads, cakes, cookies and pastries, cheese and yogurt, cider and juice, sauces locally roasted coffee, and interesting crafts from local artisans.
